After an initial maturation in refill bourbon casks, this spirit is then masterfully finished in Palo Cortado sherry casks. Considered the Winemaker's Decision, Palo Cortado is one one of the more elusive sherries, boasting the drier and more delicate flavour profile akin to Fino sherry, but closer to the weight and spice of an Oloroso.

This whisky opens with luscious notes of ripe apricot and smooth, creamy vanilla, offering a soft and inviting sweetness, it's like a crème brûlée topped with fruits.
