Aberfeldy 15 Year Old Whisky Cadillac White Wine Cask Finish

This limited release Aberfeldy is part of the series of Wine Cask finished whiskies, but offers something a little different, as the first release using a white wine cask. Beginning it's maturation in refill bourbon casks, this edition is then finished off gently using casks which had previously held a Cadillac wine. This is not only a white wine, produced using Semillon grapes, but a slightly sweeter wine, produced in the region of Bordeaux with higher residual sugar, similar to the approach taken for Sauternes.

This wine cask's influence leads to a delightfully sweet expression of Aberfeldy, with incredibly floral aromas at the forefront. The sweetness is still light and fresh with notes of honey and toffee intermingled with a refreshing citrus zest character and the characteristic fruitiness of Aberfeldy presents itself as juicy peaches. On the palate it's like a lemon cake drizzled with toffee sauce, with just the most delicate hint of spice on the finish, presumably from the French oak.

Bottled at 43%, this deliciously juicy and floral Aberfeldy is perfect for anyone who likes a sweeter whisky but is also inclined towards something more mellow than the intensely dark sweetness offered by the likes of PX. It's a fine example of how a finishing cask can elevate the Aberfeldy house style of honeyed, fruity and citrussy.

Light and sweet on the nose, with juicy fruits and floral notes on the palate, balanced with a citrussy zest. Mellow and sweet but with a medium finish and a hint of oak spice.
