Tasting notes from Alex, one of our tour guides: Double Double aged for ultimate smoothness is the tagline for this range of whiskies and that is certainly true of this dram. An incredibly easy sipping whisky with no spirit kick to it whatsoever, despite the higher ABV. A sweet buttery nose opens onto big sherry notes of raisins and cinnamon. On the palate, dried orange peel with cloves graduates into a candied sweetness. A lingering dram that will keep you warm in the Winter and would mix well with bitters and sugar to make a Christmas Old Fashioned. Smooth enough to be accessible to a novice but packed with enough flavour to hook a connoisseur.

Dewar's blended scotch whiskies are made using up to 40 different malt and grain whiskies from across Scotland. John Dewar opened his shop at 111 Perth High Street in 1846 with a clear vision to create a house style that was a fruity and smooth as possible. Dewar's have always been innovative, using cutting edge maturation techniques to ensure their whiskies stand out from the crowd.

The cornerstone of Dewar's blending process is Double Ageing. After the individual ingredients have been aged for 12/18/25 years they are blended together to create the desired flavour profile. Most companies bottle at this point, but we return the blend to an old cask for up to 6 months, to give the flavours time to integrate and also develop a smoother mouthfeel in the final whisky.

Today, this concept has been taken further in the Dewar's Double Double range, the pursuit of ultimate smoothness, which have won multiple awards since launch. Curious experimentation has been taken further with the Dewar's 8 year old Cask Series. This is a collection of the same 8 year old blend finished in unusual barrels like Rum, Mezcal or Mizunara oak.

Dewar's has pioneered the 'double ageing' process, with all the blends in the range undergoing a secondary resting in oak casks to marry the flavours and bring extra smoothness to the blend.

With the limited edition new 'Double Double' range, this process has become an art form, with a 'quadruple aging' or 'double double' aging process created by Dewar’s master blender Stephanie Macleod.

Firstly, the malt whiskies achieve their required age, and are mixed together and returned to an oak cask. The same happens to the grain whiskies. Then the two whisky types are blended together, and returned to an oak cask for a secondary double aging period. Finally, the blend is finished in an ex-Sherry cask.

This 21-year-old release has been finished in Oloroso Sherry casks, giving the whisky “subtle notes of cinnamon and ripe vine fruits with a silky smooth finish” and was recently awarded 'World's Best Blended' and 'Best Scotch Blended' at the 2021 World Whiskies Awards.
